Xavier and Kerrie Boissieu make this sparkling wine from 100% gamay grown in granite at the crossroads of Beaujolais and the Mâconnais. Farming is biodynamic. The wine ages on its lees a minimum of 18 months before disgorgement, with zero dosage. It tastes of rocks and salt (rock salt?!), oyster shells, and green apples. There is a little creaminess on the palate - this is a Brut Nature that’s precise rather than austere. It’s a delightful and classy Crémant at an extremely fair price. Drink it with oysters (raw, grilled, broiled, or swimming in a soup), triple-crème cheeses, or salt and pepper tofu.
