Born from a longtime passion for the steely, nerve-filled Chardonnay, this Crémant de Bourgogne is unique because it is made from pure estate fruit within the Chablis appellation. Romain picks fruit from over 10 lieux-dits to make this yearround craveable méthode-traditionelle sparkler, exclusive for APS. Romain vinifies his vintage base wine in stainless steel and allows the wine to sit on its lees for fifteen months before disgorgement. The dosage changes with the style and need of the vintage, but it is typically around 6 g/l. The current release is based on 2016: lemon, apple, and gardenia with tingly mineral, supported by a soft blanketed mid-palate and a seashell tang finish.
