Buelan Compania de Sacas Nevado No. 2

This wine will transport you to Andalucía in a fresh, vibrant, and natural way. Buelan Compañía de Sacas is a project of Nick Africano, musician and Sherry aficionado - although this wine is not exactly Sherry, both because of geography (well north of the Sherry triangle) and winemaking (no fortification).  Nevado is Nick’s collaboration with the muy tradicional Bodegas Gómez Nevado in the Sierra Morena mountains north of Córdoba. Farming is certified organic. The wine is fermented in stainless steel and then tinajas (traditional Spanish amphoras), followed by aging in barrels under flor - a layer of yeast that forms naturally on the surface of the wine in the un-topped-off barrels. Flor protects the aging wine from oxidation while subtly transforming the flavor profile in a more apply, nutty, and salty direction. Saca No. 2 was bottled without filtration. This is a young, fresh Pálido - akin to Fino Sherry farther south - that locals drink in restaurants and bars. 1440 bottles (120 cases) were made. Delicate golden color, distinctive aroma of salty nuts and wild herbs. Savory and textured in the mouth. Drink it with fried anything, cured salmon, or a handful of almonds.
