Pipeño is the classic everyday wine of Chile, usually from very old, bush-trained vines and historically served chilled straight from large wooden barrels. Rogue Vine’s version is from a small vineyard in Guarilihue, Itata, first planted in the early 1800s and organically farmed by hand and horse. It is a field blend of 65% cinsault, 40% país, and 5% carignan, fermented and aged in concrete vats. The flavors suggest red plums, with a little spiciness and a lot of zing. Chill it for 20-30 minutes and then drink it with empanadas (carne o queso), grilled flank steak with salsas, or even a hearty seafood stew.
