Elio Altare is one of the best-known producers in the La Morra commune of Barolo, as well as a long-time Paul Marcus Wines favorite. While Barolo and the Langhe are famous for nebbiolo and barbera, it’s dolcetto that the locals favor as their go-to, every-occasion wine. It’s got everything: lovely fruit, just enough acidity, and a tweak of tannin. The Altare Family’s farming is practicing organic. Their Dolcetto d’Alba macerates on the skins briefly and very gently: 2 to 3 days in rotary fermenters with temperature control. Aging is in stainless steel tank for about 10 months. This is richer, more powerful Dolcetto with beautiful, elegant violet and black cherry fruit and supple tannins. Drink it with antipasti of all kinds, pizza, and just about anything else - as the Piemontesi do.
