This is Zlatan Otok’s "bistro red" (and, in fact, "Bil Idro" is the name of his restaurant and wine bar on the island of Hvar). 100% Plavac Mali, organically grown. Indigenous fermentation and eight days of skin maceration, followed by 18 months of aging, all in stainless steel tanks. The wine is fresh, bright, and surprisingly complex for its price. Chill it for 15-30 minutes before drinking.
