Prosecco and Franciacorta are the more famous sparkling wines from Italy, but Trentodoc - a Denominazione di Origine Contrallata (Italian wine appellation) for sparkling wines grown and made in the subregion of Trentino, around the main city of Trento - is a significant sparkling wine area as well. Trentodoc wines must by law be what the Italians call metodo classico, or Champagne method: secondary fermentation in the bottle, with disgorgement to clear the wine of the accumulated yeast. This wine is Revì’s vintage-dated dosaggio zero, meaning no added dosage (sugar or grape must added to many sparkling wines to soften the acidity) after disgorgement - so bone dry. It is 75% chardonnay and 25% pinot noir, with 36 months of aging on the lees. Apples and citrus, an exuberant bubbliness, and plenty of character from the three years of lees aging in the bottle. It’s both classy and comfortable. Drink is at an aperitivo and/or with fried foods, whether fritto misto, tempura, or good ol’ fried chicken.
