Jérôme Galeyrand farms 5 hectares in the Côte de Nuits, with his winery in Gevrey-Chambertin. Viticulture is organic for 70% of the vineyards and sustainable for 30%, with no pesticides. 'La Justice', planted between 1950 and 1960, is a lieu-dit in Gevrey-Chambertin. It has limestone bedrock with sandy, well-draining topsoil. The wine is 100% de-stemmed, ferments with indigenous yeast, and ages for 16 months in barrel (20% new oak).
