Jérôme Galeyrand farms 5 hectares in the Côte de Nuits, with his winery in Gevrey-Chambertin. Viticulture is organic for 70% of the vineyards and sustainable for 30%, with no pesticides. 'Antonin' is from four parcels at the bottom of Chambolle with clay-limestone soil. It's 100% de-stemmed, ferments with indigenous yeast, and ages for 16 months in barrel (20% new oak).
