From the Vaillant family's vineyards in Bellevigne-en-Layon, south of Angers in the western Loire Valley. Certified organic and biodynamic farming. Whole cluster semi-carbonic maceration for 12 days, followed by fermentation and aging for 3-6 months in used barrels. ØØ: no added sulfites nor anything else; unfiltered.
