The Ribeira Sacra in Galicia, northwest Spain, is an important ancient wine region that fell into neglect and obscurity in the 20th century and has rebounded spectacularly in the past couple of decades to become among the “new (or re-newed) classic” European wine regions. It is a spectacularly steep set of river valleys studded with tiny, terraced, slate-and-granite-rich parcels of old vines. ‘Envínate’ (= “wine yourself!”) is four friends from different parts of Spain who met in enology school and then banded together to make wines from Galicia and the Canary Islands - both Atlantic-influenced parts of Spain. ‘Lousas’ is their village wine from Ribeira Sacra, organically farmed and mostly 60-year old mencía. The grapes were foot-trod and indigenously fermented with a portion of whole clusters and then aged for about a year in used oak barrels. The flavors are of berries, herbs, and black pepper, with a floral note and hint of slatey stoniness. A slight chill enhances the wine’s exuberant freshness. Drink it in a Burgundy or other large stem with roast chicken, other fowl, or heartier seafood (calamari, octopus, tuna).
