The Columbia Valley is a good place for growing cabernet sauvignon because of the significant day-night temperature swings (“diurnal shift”). And DeLille Cellars is one of the pioneers and current stars of Bordeaux-variety-based wines in the area. Métier is their project using grapes purchased from other growers. The wine macerates with the skins for 8-10 days and then is aged in French oak barrels, about 40% of which are new. It has all the flavors you could want in a New World Cabernet - dark red and black fruits, cedar, coffee, chocolate, and a hint of bell pepper - without jamminess or excessive heaviness. So: flavorful but not out of control, and still good with food. For example: beef short ribs and/or earthy winter vegetables.
