This wine comes from the Tsiakkas family, near Cyprus’s Mount Olympos. Certified organic farming of 80-year old ungrafted, bush-trained vines in sandy, volcanic soil in a north-facing vineyard at 920 meters altitude. Mavro ambelissimo is the variety (100%), and Mouklos is the name of the vineyard. Indigenous fermentation with 80% whole clusters and 35 days of (gentle) maceration, all in stainless steel. Super-light color. Light red fruits, delicately floral and herbal. Great acidity and liveliness. Anyone who likes Beaujolais, Poulsard, Schiava, Pelaverga, etc. should love this wine. Definitely chill it a bit (15-25 minutes) and then enjoy it with charcuterie, moussaka, pork, or lamb.
