Stratum Wines is a project from fourth-generation growers and siblings Carlos, Juanjo, and Lucía Cerdán in Jumilla, a wine region in southeast Spain that straddles the regions of Castilla - La Mancha and Murcia. Farming is certified organic and biodynamic. 'Matas Atlas' is 90-95% monastrell (a.k.a. mourvèdre), with small amounts of other local varieties. The 70-year-old ungrafted vines are at 900 meters above sea level in calcareous soils. The wine ferments in wooden vats for 60 days before being pressed into large, neutral oak barrels for a year of aging. It’s bottled without fining or filtering. Dark red and black fruits, citrus, and spice. There’s a nice texture, with bright acidity and a little tannic grip. Try it with barbecue, smoked meats, eggplant, or goat cheese
