Paul Gadenne is a first generation vigneron who grew up in Chignin, in the Savoie department in eastern France. He farms 4.5 hectares organically. 'Hors Norme' (“outside the norm”) is 60% mondeuse and 40% gamay, with carbonic fermentation for 10 days and six months of aging in stainless steel. There’s no fining or filtering and very little added SO2. Mondeuse gives dark fruits and some earthiness, gamay more crunchy red fruits; the carbonic maceration adds brightness and lift. Only 11% alcohol; as importer Sacred Thirst warns, it’s dangerously easy to drink! Like the preceding wine, this red benefits from 20-30 minutes in the fridge. Try it with barbecue, grilled sausages, or smoked eggplant dishes.
