John Foillard makes deep, structured, and complex Beaujolais, mostly from Morgon. Eponym is from 45-50 year-old organically-farmed vines in Les Charmes vineyard, the highest altitude lieu-dit in the Morgon appellation. Soils are schist and granite, with a high concentration of manganese. Traditional, whole-cluster fermentation for 3-4 weeks and then aging for 6-9 months in used oak barrels.
