Clos Cibonne is the iconic producer in Côtes de Provence of “age-worthy fine wines which happen to be rosé”, as their importer puts it, made from the local variety tibouren (= rossese across the border in Liguria). The traditional wines are aged under a thin layer of flor, like Sherry and some Jura wines. Farming is certified organic since 2019. 'Cuvée Spéciale des Vignettes' is from the estate's oldest tibouren vines (60+ years). It is directly-pressed and fermented with indigenous yeasts in stainless steel tanks. Aging under flor is in 120-year-old, 5,000-liter foudres for one year. 13.5% alcohol. This is the longest-aging cuvée from Clos Cibonne; you can cellar it for 10 years or more.
