Vino de la Tierra de Castilla y León (specifically the Sierra de Salamanca D.O.). El Helechal is a steep, 40-year old vineyard planted with the rare variety Rufete Blanca. The soils here have high levels of flint, slate and limestone. Organic and biodynamic farming. Indigenous fermentation. A part of the grapes are macerated on the skins for up to two weeks, and the wine is aged for 10 months in used French barrels.
