Sylvie Esmonin began working with her father, Michel, at the family estate in Gevrey-Chambertin in 1985 and gradually took over all of the farming and winemaking responsibilities - except plowing, her dad’s favorite task in the vineyard! Farming is uncertified organic, fermentations are indigenous, and all of the wines are unfined and unfiltered. The Côtes de Nuits-Village comes from two vineyards (50 and 90 years old) in Brochon, a small village between Gevrey-Chambertin and Fixin. The grapes are 70% destemmed and 30% whole-cluster. Sylvie starts fermentation in open wood vats and then racks to barrel after 10-12 days to finish fermentation and aging. The barrels are 30% new oak, 50% second passage, and 20% third passage. Dark fruits with a smoky, peppery edge and ripe tannins. This is concentrated, powerful red Burgundy, without lacking any finesse or freshness. Cellar it for up to a decade or drink it now with beef bourguignon, mushroom dishes, duck or game birds, or simply a hearty roast chicken.
