A wine from Canada! Cave Spring Vineyard is the Pennachetti family’s winery in Ontario, nestled between Lake Ontario and Lake Erie. Their cabernet franc comes from the Beamsville Bench, which is a VQA (Vintners Quality Alliance - Ontario’s wine appellation system) just south of Lake Ontario and west of Niagara Falls. After indigenous fermentation, the wine was aged for 14 months in 225- and 500-liter oak barrels and bottled unfiltered. It’s a richer expression of cab franc, with coffee and mocha flavors complementing the variety’s trademark herbal notes, here leaning towards mint. And the tertiary flavors from bottle age help temper the exuberant fruit. Try it with mole or eggplant dishes.
