Elisabetta Fagiuoli's Montenidoli is the reference point producer in San Gimignano, Tuscany. Farming is certified organic. Il Templare is her homage to the Knights Templar who lived in San Gimignano a millenium ago. It is 80% vernaccia, 15% trebbiano gentile, and 5% malvasia bianca, fermented and aged for 12 months in used barriques. It is then aged for additional years in glass-lined cement vats and in bottle before release. This is a more weighty, complex, and age-worthy expression of Vernaccia from San Gimignano - the white Burgundy of Tuscany, if you will.
