Antonio Vallana is an historic, fourth-generation, old-school producer - just look at the label! Their Boca is two-thirds nebbiolo (or “spanna” in Alto Piemontese parlance) and the remainder vespolina and uva rara: two other local red varieties that are part of the historic nebbiolo-based blends in northern Piemonte. Farming is practicing organic. Fermentation happens in enormous and ancient concrete tanks, followed by aging in 1000-liter old oak casks for two years. The wine tastes of tart red and black fruits, with notes of white and black pepper that emerge with aeration. There’s a dark, slightly smoky volcanic minerality and acidity, moderate tannins, and that distinctive iron note. This wine will last a lot of years if you choose to cellar it, but don’t hesitate to drink it now. Give it plenty of air (decant it and/or drink it slowly with plenty of swirling), which will enable the higher-toned aromas and flavors to emerge. It would be great with steak au poivre as well as braised meats, hearty vegetable stews, and aged cheeses.
