'Nout' is Michel and Stéphanie Théron's more supple cuvée from younger vines and with a higher percentage of Merlot (but still mostly Cabernet Sauvignon), grown in sandier soils. Organic and biodynamic farming. Indigenous fermentation happens in concrete vats, with 7-10 days of maceration. Aging is in a mix of barrel sizes, including approximately 50% new.
