This is Michel and Stéphanie Théron's top wine. 70% Cabernet Sauvignon, 20% Merlot, and 10% Cabernet Franc from soils that are a mix of clay, sand, and gravel. Organic and biodynamic farming. Indigenous fermentation happens in a mix of stainless steel and concrete, with 20 days of maceration. Aging is for 12 months in barrels, including approximately 70% new.
