"Vineyard sits on a ridge known as Holmes Gap, where the winds rip through; the fruit ripens slowly, developing rich and complex flavors while retaining focused acidity.  Organic farming.  Aged in 500 and 350 liter barrels for 12 months and finished in stainless steel for 3 months.  The wine has a concentration of flavor and aromatics.  The palate is elegant and textural with mouthwatering acidity.  175 cases."
