Clos Cibonne is the iconic producer in Côtes de Provence of “age-worthy fine wines which happen to be rosé”, as their importer puts it, made from the local variety tibouren (= rossese across the border in Liguria). Farming is certified organic since 2019. 'Caroline' is a vineyard selection from 40+ year-old vines of 85% tibouren, 10% grenache, and 5% syray, aged in 300-liter barrels. Unlike with most of the Clos Cibonne rosés, the barrels are topped up, and thus the wine does not age under flor.
