Longaví is a town, volcano, and winery in central Chile’s Maule Valley, three hours south of Santiago. 'República' is mostly carignan, with a little grenache and mourvèdre, from dry-farmed, old bush vines growing in decomposed granite. It fermented in concrete vats and then aged for eight months in old barrels. It tastes of dark red fruits, with hints of graham cracker and milk chocolate - think of an unsweet version of s’mores, but with raspberries instead of marshmallows! Try it with beef empanadas, lengua tacos, or lentil stew.
