Canopus is the project of Gabriel Dvoskin, a musician, writer, and war correspondent who returned to Argentina in 2007 to plant grapes in the cold southern end of the Uco Valley of Mendoza. His farming is certified organic and biodynamic (on the way to certification). ‘Nox’ is a pet-nat rosé of malbec from vines planted in calcareous limestone-rich soils at 1090 meters of elevation. The wine was bottled after one month with enough residual sugar left to develop bubbles while still fermenting dry. No sulfur added (øø). The wine is a vibrant salmon-pink color. It has a strawberry, citrus, and mineral nose, with the heady aromas of a bottle-fermented wine. On the palate, it’s fresh and zippy with just enough fruit, clean, and bone-dry. Use it as you would any other rosé, fizzy or otherwise, including aperitif, salumi, bouillabaisse, or paella.
