Giambattista Cilia, Giusto Occhipinti, and Cirino Strano created COS in 1980 outside the town of Vittoria in southeast Sicily. The area is best known for Cerasuolo di Vittoria, a blend of Nero d’Avola and Frappato. COS's rendition is 60% Nero d'Avola and 40% Frappato, from their own parcels just north of Vittoria. Spontaneous fermentation in concrete tanks with indigenous yeast, followed by 18 months of aging in Slavonian oak botti.
