Agnès Paquet became a viticultrice in 2000, when, fresh out of business school and knowing nothing about viticulture, she purchased a three-hectare parcel from her parents in Auxey-Duresses (Côte de Beaune, Burgundy). Through study and apprenticeship, especially with Jean-Pierre Charlot of Domaine Joseph Voillot in Volnay, she has grown into an accomplished producer of white and red Burgundy - and one of the centerpieces of our Burgundy selection at Paul Marcus Wines. Patience #10 (the 10th vintage of this wine) is from a terraced vineyard in Auxey-Duresses called Les Hoz on mostly white limestone soils. Farming of the 90-year old vines is organic. Agnès ages the wine for 12 months in 350-liter barrels, 30% of which are new. 13% alcohol. This is terrific, old-vine white Burgundy, with an explosively expressive nose of orchard fruits and deftly-integrated oak. The palate is voluptuous without excess, with refreshing acidity and great depth and length. It’s certainly a gastronomic wine: scallops, New England clam chowder, mushrooms in cream, white meats, or fresher cheeses.
