COS is one of the most famous producers in southeast Sicily, near Vittoria. Giambattista Cilia, Giusto Occhipinti, and Cirino Strano created it in 1980. Farming is organic and biodynamic. Ramí is 50% Grecanico and 50% Insolia from the vineyards of Fontane and Bastonaca, fermented and macerated with the skins for 8-10 days. Both fermentation and aging take place in concrete vats. It's light gold in color and smells of ripe stone and orchard fruits. In the mouth, it's medium-bodied with just a little tannin and moderate acidity. This is an easy-to-like orange wine and an excellent introduction to COS's deft hand with skin-contact whites.
