Cinzia Canzian created Le Vigne di Alice in 2004 with a mission to make pure, elegant, mineral, natural, Brut-dry (and Brut Nature-dry) grower Prosecco. The winery is named after her grandmother, Alice, who served the family’s wine from her osteria. This wine is 100% Glera from the single vineyard Doro, an hour north of Venice and in the shadow of the Dolomites. The soils are stony and rich in glacial moraine, which lends minerality to the wine. Metodo Martinotti/Charmat. Spontaneous primary fermentation; pied de cuve for secondary fermentation in tank - that is, no added yeast in either fermentation. Doro is Brut Nature* and as dry and elegant as Prosecco gets.
* "Brut Nature" means that no dosage is added before bottling to sweeten the finished wine. Doro is 3 g/L residual sugar - i.e., absolutely bone dry. So-called "Extra Dry" Prosecco is 12-17 g/L R.S., and even most Brut Proseccos are 6-12 g/L.
