Vignedimare ("vineyards of the sea") is a project of Antonio Caravaglio in the Aeolian Islands of Sicily, a string of volcanic islands north of Mount Etna and mainland Sicily. Salina is one of those islands. Soils are volcanic sand, and farming is certified organic. Salina Rosso is corinto nero, nerello mascalese, and other local red varieties. The wine has a distinctive flavor profile of saturated red fruits and dark, volcanic minerality. It's flavorful, lively, and sophisticated. Drink it with dishes that feature cumin, red chile, or capers. (Caravaglio is also a renowned grower-producer of capers; you can find them at Market Hall Foods.)
