Valpolicella is an historic wine region in the Veneto near Lake Garda and an hour and a half drive west of Venice. You wouldn’t know it from drinking Amarone or Ripasso, the “Big Wines” of the area, but the classic Valpolicella was light, fresh, and low alcohol - a “chillable red”, as we like to say nowadays. Il Sasso brings us back to that historic style. Farming of the traditional Valpolicella grapes - corvina, corvinone, rondinella - is certified organic. Spontaneous fermentation and brief aging both happen in stainless steel tanks. The wine is bottled unfiltered. It’s light in color and light in body but not light in flavor! Crunchy stone fruits with floral, herbal, and spicy tones, tanginess, and low tannin. At 12% alcohol, it goes down easily and pleasurably. Give it a solid chill - 30-45 minutes in the fridge isn’t too much - and drink it with beef carpaccio, pizza, or herbed fish.
