The town of Modena in western Emilia-Romagna, besides being ancient and beautiful and the source of Balsamico di Modena, is in the heart of Lambrusco-land, where fizzy red and rosé wines rule. These wines cleanse the palate, go down easily, and complement perfectly the famously rich and flavorful foods of Emilia - among many other dishes. Most Lambruscos historically were made using the metodo ancestrale, with a second fermentation in the bottle to create the fizz, but without the disgorgement that characterizes Champagne and other wines made in that style.
Cantina della Volta is a relatively new winery founded by Christian Bellei in 2010 based on four generations of family experience growing grapes and making wines. He and his father chose to focus on sparkling wines in the metodo classico (= classic or traditional method, a.k.a. “Champagne method”). Their Lambrusco di Sorbara is a vintage sparkling wine made from the grape of that name; sorbara is the highest-acid and lightest of the numerous Lambrusco grape varieties and lends itself especially well to making sparkling and fizzy rosés. Secondary fermentation in the bottle before disgorgement lasts at least 42 months. The wine is a beautiful pale salmon color, with aromas of crushed dried flowers and crushed stones and just a wisp of berry fruits. There is great acidity buffered by leesiness, with complexifying tertiary flavors from the wine’s age.
