Stratum Wines is a project from fourth-generation growers and siblings Carlos, Juanjo, and Lucía Cerdán in Jumilla, a wine region in southeast Spain that straddles the regions of Castilla - La Mancha and Murcia. Farming is certified organic and biodynamic. 'Maulao' is 85% Monastrell + 15% Garnacha Tinta from own-rooted biodynamically-farmed 25-50-year-old vines growing at 820-920 meters above sea level. The grapes fermented spontaneously in large open-top wood vats and barrels. After fermentation the wine spent 12 months in neutral oak barrels and foudres before bottling without fining or filtering.
