Bouzeron is a town in the Côtes Chalonnaise subzone of Burgundy, seven kilometers south of Chassagne- and Puligny-Montrachet. It’s also one of two appellations for wines made from the grape variety aligoté. The other AOC is Bourgogne Aligoté; wines thus labelled can come from anywhere in Burgundy, while wines labeled Bouzeron must come from that village or the neighboring village, Chassey-le-Camp. You might think of aligoté as the Other White Burgundy, or perhaps ABC (Anything But Chardonnay). Xavier Moissenet created Les Champs de Thémis in 2014. The name of the domaine, the Fields of Themis, refers to the goddess of justice and daughter of Gaia (earth), thus combining Moissenet’s previous profession of magistrate and current one as farmer. His Bouzeron is from 45-year-old, organically-farmed vines growing in rocky, fossil-rich clay-and-limestone soil. Fermentation and aging was in stainless steel; the wine was bottled unfined and unfiltered. The nose is orchard fruits and flinty minerality, lightly floral and herbal. The palate is leaner, snappier, and saltier than “regular” white Burgundy (a.k.a. chardonnay). It’s an easy yet characterful aperitif and tasty with corn frittata or jalapeño salsa.
