Jean-Marie Rimbert’s vineyards and winery are located in the Languedoc appellation of Saint-Chinian, between Montpellier and Toulouse. Mas au Schiste is carignan, syrah, and grenache, all certified organic and mostly 50+ year old vines and mostly from the domaine’s steepest parcels. The name means “pile of schist” - from the soils, of course - but it’s also how the French pronounce “masochist”; Jean-Marie is an inveterate punster. Indigenous fermentation in stainless steel and enamel-lined tanks, then aged on the lees for 12 months in 3-13 year old Burgundy barrels. Just 13%-fresh alcohol. Black fruits, black olives, savory herbs, and crushed rocks. Have it with lamb, cassoulet, or herb-marinated vegetables on the grill.
