Domaines aux Moines is in the Savennières subregion of Anjou, in the middle Loire Valley. The domaine was created by Madame Monique Laroche in 1981 and subsequently taken over by her equally charismatic and energetic daughter Tessa Laroche. Soils are schist-y (pronounce with care!), and farming is certified organic. ‘Le Berceau des Fées’ (“the cradle of the fairies”) comes from the estate’s younger vines. It’s golden in color, with ripe orchard fruits laced with minerals and smoke. There’s texture and tingly acidity on the palate. It’s good with creamy cheeses, including Jasper Hill Farm’s Whitney from Vermont. There are lots of seafood possibilities, including crab and salmon.
