Johannes Zillinger is a natural wine grower and producer in the Weinviertel, Niederösterreich (northeast Austria, near the borders with Slovakia and the Czech Republic). 'Revølutiøn' is a blend of chardonnay, riesling, and scheurebe, made in a decidedly Baroque fashion: The chardonnay macerated on the skins for about 10 days in 1000-liter clay amphoras. The scheurebe (a crossing of riesling with an unidentified, perhaps wild, grape variety) was added to a solera started in 2017 in 600 liter acacia barrels - so multiple successive vintages blended and aged together. The riesling was added to a solera started in 2013 in stainless steel tanks. Then all of the chardonnay and a portion of each solera were blended together to make this wine. As the name "Revølutiøn" indicates, this wine is ØØ, i.e., nothing added and nothing taken away. The nose is cool and stony, with a pleasing whiff of reduction (that flinty, slightly eraser-y aroma that, in smaller concentrations, lifts the aromas). The fruit is discreet without being austere, and there’s an enveloping texture that provides additional substance. This is a lovely, easy-to-drink natural wine with complexity and a great quality-price ratio. Pour it for your chardonnay-loving and chardonnay-hating friends, perhaps with pasta primavera.
