This is a Slovenian pétillant-naturel - or peneče in Slovene - made from the teran grape variety. Practicing organic farming in ruddy-red, iron-rich soils in the Kras/Carso wine region, which straddles southwest Slovenia and northeast Italy. Spontaneous fermentation and then put into bottle to finish fermentation and create the fizz. Disgorged once, and with no added sulfites. 12.8% alcohol and 2.7 g/L of residual sugar (i.e., quite dry). This wine is Slovenia's answer to Lambrusco: sour cherry fruit, tartness, and fizzy fun, with an extra little iron twang from the soils. As the label says: "Chill. Drink. Repeat." It’s great with salumi/charcuterie, barbecue, pizza, or just chilling on the deck or by the shore with friends.
